Craig Norman Williamson, 30, is accused of assaulting a man in custody at Surry Hills on the night of October 5 in 2018.
Williamson did not appear when his matter was briefly mentioned at Downing Centre Local Court on Tuesday, but his lawyer entered a plea of not guilty on his behalf.
"I am instructed to enter a plea for not guilty," Greg Willis told magistrate Vivien Swain on Tuesday.
Williamson was a senior constable from the central metropolitan region and was currently suspended from duty, NSW Police said.
The matter was adjourned until April 30.
