The recipe appeared in a Catholic Women’s League Diocese cook book and has been picked up by families from the Riverina and beyond.

One of the people who enjoys sharing the recipe with her family is food blogger Lo Corcoran.

Mrs Corcoran grew up in Sydney and is one of five children and now lives in Wagga. A love for cooking and traditional methods were passed down from her mum Meg, and her grandmother Mim Rosalie-Broughton from “Jamea”, Trangie. One of the family favourite recipes, that has been shared through the generations, is beef chow mein.

It was written by Urana’s Anne Bourke and contains easy-to-find pantry staples and is considered economical to make. This recipe is enjoyed by Mrs Corcoran’s husband Tim and children Charlotte, 4, and Annabelle, 2. But in recent times, through social media, Mrs Corcoran was able to make contact with Mrs Bourke’s son Pat Bourke of Urana. “I plan to go to Urana with the girls and have a cup of tea with her (Anne Bourke),” Mrs Corcoran said. 

Aside from cooking meals to share with family and friends Mrs Corcoran enjoys writing for her food-blog titled Lo’s Kitchen. She draws on inspiration from many of the country cooks like Mrs Bourke. She said it would be lovely for Mrs Bourke to know just how popular this recipe had been in her family over the years. 

“It has been a tradition for us,” she said. 

“It just shows how social media can be really positive as an engagement tool,” she said.
